    Recipe Introduction


    I've had this recipe so long, I can't remember where I got it from.


    List of Ingredients


    • 1 Pound summer squash
    • 1/2 Stick of butter, melted
    • 1 Egg
    • 1/2 cup mayonaise
    • 1 Large onion
    • 2 cups shredded sharp cheese
    • 1 stack crumbled Ritz or Townhouse crackers


    Instructions


    1. Cook Summer Squash and onion together until crisp, not soggy. Either steam or boil.
    2. Drain thoroughly and put in a greased (with pam) 2 quart cassarole dish.
    3. Add all the other ingredients with the squash and onion. Mix well.
    4. Bake in preheated 350 degree oven for 30-35 minutes. The top will be bubbly and just browned.


    Final Comments


    My kids hate squash, but they do eat this. This is one of my husband's favorite cassaroles.
