WOK Chicken and Cashews

I man I dated many years ago obtained this form a great Chinese place in NJ. It is very good. I play with it adding more ginger and using red as well as grren peppers.
List of Ingredients
Chicken with Cashews
* items for marinade
# items for flavor sauce
1 lb boned chicken breast
2 green onions
3 slices of ginger the size of a quarter 1/4 inch slices (I mince mine since I love ginger)
* 1/2 egg white use whole egg white if egg is small
* 1 TBS corn starch
* 1 TBS soy sauce
# 2 TSP soy sauce
# 1 TSP white wine dry
# 1/2 TBS brown vinegar
# 1/2 TBS corn starch
# 1/2 tsp salt (I never add)
2/3 c. cashews
1 large green pepper
mushrooms (optional
# 1 tsp sugar
oil
Cut chicken into bite size pieces. Mix with marinade and let stand for at least 1/2 hour.
Cut green pepper the size of walnut halves. Cut green onions into 1/4 - 1/2 in lengths.
Brown cashews until golden brown be careful they continue to cook because of oil content.
Put oil into bottom of a wok and heat until hot and stir fry chicken.
Remove chicken, add more oil to the wok and make good and hot. Add onions and ginger and cook around 30 seconds.
Add green peppres and cook 2-3 minutes, add onions and cook a bit longer. Return chicken to wok add flavor sauce and cook 1 minute.
Add cashews and serve with rice.
