Sweet & Sour Fried Pork
This dish orginated in Canton and is one of the most famous and most reproduced Chinese dishes in the world You may use beef or chicken instead of the pork in this recipe. Uncooked, peeled shrimp may be used, cut into 1" pieces.
1 cup flour
4 Tbsp. cornstarch
1 1/2 tsp. baking powder
Pinch Salt
1 Tbsp. oil
Water
8 oz. pork tenderloin, cut into 1/2" cubes
Sweet and Sour Sauce
2 Tbsp. cornstarch
1/2 cup light brown sugar
Pinch salt
1/2 cup rice vinegar
1 clove garlic, crushed
1 tsp. fresh ginger, grated
6 Tbsp. tomato ketchup
6 Tbsp. reserved pinapple juice
1 onion, sliced
1 green pepper, seeded, cored & sliced
1 small can pineapple chunks, juice reserved
Oil for frying
Serves 2-4
1. To prepare batter, mix cornstarch, flour, baking powder, oil and salt in a bowl. Add just enough water to make a thick, smooth batter. (much like pancake batter consistency)
2. Heat enough oil in wok or fry pan to deep-fry the pork. Dip the porkcubes one at a time into the batter and drop into the hot oil. Fry 4-5 pieces at a time and remove them with a draining spoon onto paper towels. Continue until all the pork is fried. ( keep a heated oven-proof dish on a nearby burner on warm to place the drained pieces in.)
3. Pour off most of the oil from the wok and add the sliced onion, pepper and pineapple. Cook over high heat for 1-2 mins. Remove and set aside.
4. Mix all the sauce ingredients together ( I use a whisk to get the lumps out from the cornstarch) and heat in a saucepan, bringing slowly to a boil. Stir constantly and continuously until thickened. Allow to simmer for about 1-2 mins or until completely clear.
5. Add the vegetables, pineapple and pork cubes to the sauce and stir to coat completely. Reheat for 1-2 mins. and serve immediately.Recipe
