Spinach Salad with Warm Bacon-Mushroom Dressing
If you have access to curly leaf spinach, this is the place for it! Using all white mushrooms is fine, but again, a variety of shiitake, crimini, and white is best.
Saute bacon in a nonstick skillet over medium-high heat until crisp; drain. Pour off all but 1 T. drippings.
Saute half the mushrooms, tossing occasionally until browned; season with salt and pepper and remove from pan. Saute remaining mushrooms; remove from the pan.
Heat 1 T. oil, then saute onion very briefly, about 2 minutes—it should remain a bit crisp.
Stir in vinegar, honey, and mustard. Simmer until reduced slightly, about 1 minute. Remove from heat.
Whisk in oil; season to taste.
Toss dressing with spinach, bacon, mushrooms, croutons, and egg. Serve immediately.
