Cheeseburger Soup
1/2 lb. ground beef
3/4 c. chopped onion
3/4 c. shredded carrots
3/4 c. diced celery
1 tsp. dried basil
1 tsp. dried parsley
3 c. chicken broth
4 c. diced potatoes
Brown and drain beef, set aside. In soup pot saute carrots, celery, onion, basil and parsley in 1 Tbsp. butter until tender. Add chicken broth and potatoes, bring to boil, cover and simmer 10 to 12 minutes or until potatoes are tender. Meanwhile:
In a small skillet melt 3 Tbsp butter, add 1/4 c. flour, cook and stir 3 to 5 minutes or until bubbly. Add to soup, bring to boil cooking and stirring 2 minutes. Reduce to low then add:
2 c. cubed Velveeta
1 1/2 c. milk
3/4 tsp. salt (I use less)
1/4 tsp. pepper
Cook and stir until cheese melts. Remove from heat and blend in 1/4 c. sour cream.
