    Fiesta Cheese Soup by moo
    This was served at my church Thursday night. Not a drop left. She served it with tortilla chips, and doubled the recipe. I think if ahe had tripled it, there still would have been not left! Roll Eyes And, oh boy, is it easy!

    Fiesta Cheese Soup

    1# ground beef
    1 medium onion, diced
    1 can whole kernal corn
    1 can pinto beans
    1 can stewed tomatoes
    1 can Rotel tomatoes (heat of your choice)
    1# Velveeta cheese, chunked for easier melting

    In a large pot, brown the ground beef, drain. Add the diced onion and saute with ground beef until the onions are translucent. Add the undrained corn, beans, stewed tomatoes and Rotel. Simmer for 15-20 minutes. Lower the heat and add the chunked cheese, stirring until cheese is melted.

    This recipe doubles easily for a crowd. Serve with tortilla chips.

    Note: I don't think that you can go wrong with this soup, adding or subtracting what you like.
    She used kidney beans, as that is what she had, but I would prefer the pinto. You can very the heat by the heat of the Rotel tomatoes you buy. I think that this could be just a starting point to personalize it according to your family and their tastes!
