    CREAMED SPINACH

    2 packages, 16 oz each, frozen chopped spinach, thawed
    4 small shallots, chopped
    3 cloves garlic, minced
    1 tsp salt
    ¼ tsp freshly ground black pepper (or more to taste)
    Chicken broth, about 2/3 cup
    2/3 cup sour cream

    In a skillet, heat the spinach over medium high heat for about 5 minutes or until liquid evaporates. Add the shallots and garlic. Cook until tender, stirring frequently. Add the salt, continue heating and stirring. When pan starts to get dry, add some chicken broth, about 2 Tbsp at a time and continue stirring and heating, adding chicken broth as needed until about 30 minutes has passed. Add the sour cream just before serving and heat through and serve.
