    French Onion Casserole

    4 medium onions, sliced
    3 Tbsp. butter
    2 Tbsp. flour
    1/2 tsp. pepper (or to taste)
    3/4 cup beef bouillon
    1 4/ cup dry sherry
    1 1/2 cups plain croutons
    2 Tbsp. melted butter
    2 oz. shredded Swiss cheese
    3 Tbsp. grated Parmesan (fresh is excellent)

    Cook onion in 3 Tbsp. butter until tender. Blend in flour and pepper. Add bouillon and sherry. Cook, stirring until thick. Turn into a 1 quart casserole (this dish goes under the broiler so be sure the pan can be placed under the broiler). In a bowl, toss croutons with 2 Tbsp of melted butter. Spoon over top of onions. Sprinkle with both cheeses. Place under broiler just about 1 minutes (keep your eyes on it!). Serves 4
