Jim's Alabama BBQ ribs 1 slab of ribs--trim fat 1 teaspoonful seasoned salt 1 teaspoonful black pepper 1 teaspoonful cayenne pepper--adjust to taste 1 teaspoonful Cajun seasoning 1/2 cup vinegar 1/2 cup water BBQ sauce Rub dry ingredients into meat. let set at room temperature for 30 minutes Grill with coals on one side and meat on the other. Grill for 2 1/2 hours--brush with vinegar and water mixture every 30 minutes. Remove from grill and wrap in aluminum foil. Replace on grill and cook for 2 1/2 hours more. Remove ribs from foil and brush with BBQ sauce grill for additional 15 minutes on each side over hot coals. (Cooking in aluminum foil makes meat very tender)
