    Beef Vegetable Cabbage Soup

    Sometimes I just have to have beef cabbage soup. This one is my favorite, by far. The recipe was given to me by a very dear friend, and I think of her when we have this soup. Really easy, and so delicious.

    List of Ingredients




    1 large can of tomato juice (46 oz size)
    1 large can of water (use your juice can; plus 2 cups, for more broth)
    1/2 onion, diced
    4 cloves of garlic, minced
    2 carrots, cut up
    4 potatoes, cut up
    1/4 head of cabbage (I added a bit more than 1/4 of a head of cabbage, personal preference)
    1 1/2 cups frozen corn
    1 can of green beans
    1 package of stew beef (I use about 1-1 1/2 pounds of beef chuck, cut into bite size pieces)
    8 beef bouillon cubes (I use 8 tsp of the Beef Better Than Bouillon)
    salt and pepper to taste

    Recipe



    1 In a large pot, add the juice and water.
    2 Then add the onion, garlic, carrots, potatoes and cabbage. Bring to a boil, then simmer for 35 minutes.
    3 Then add the corn, green beans, beef chuck and beef cubes(or Better Than Bouillon).
    4 Simmer for another 40 minutes or so, until beef is tender. Season with salt and pepper.


    Preparation time: 20 minutes
    Cooking time: 1 hour and 15 minutes
    Ready in: 1 hour and 35 minutes
