Banana-Rum Fruit Bread

This is a great tasting bread. Nice to have on hand over Chrismas. Very easy to make.
List of Ingredients
- 1 cup sugar
- 1/2 cup salad oil
- 2 eggs sligthly beaten
- 3 ripe bananas, mashed (1-1/2 cups about)
- 2 cups all purpose flour
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1 tsp. salt
- 3 tbsp. rum
- 1 cup mixed fruit peel including raisins
Instructions
- Preheat oven to 350 deg. Grease and flour 9" x 5" x 2-1/2" loaf pan. In a large bowl beat sugar and oil.
- Add eggs and bananas and beat well.
- Add flour, baking soda, baking powder and salt, mix well.
- Add rum and mix well. Then stir in fruit.
- Pour into loaf pan. Bake about 1-1/2 hours or until cake tester inserted in center comes out clean. Cool and store one night before slicing.
