    Banana-Rum Fruit Bread

    This is a great tasting bread. Nice to have on hand over Chrismas. Very easy to make.


    List of Ingredients


    • 1 cup sugar
    • 1/2 cup salad oil
    • 2 eggs sligthly beaten
    • 3 ripe bananas, mashed (1-1/2 cups about)
    • 2 cups all purpose flour
    • 1 tsp. baking soda
    • 1/2 tsp. baking powder
    • 1 tsp. salt
    • 3 tbsp. rum
    • 1 cup mixed fruit peel including raisins


    Instructions


    1. Preheat oven to 350 deg. Grease and flour 9" x 5" x 2-1/2" loaf pan. In a large bowl beat sugar and oil.
    2. Add eggs and bananas and beat well.
    3. Add flour, baking soda, baking powder and salt, mix well.
    4. Add rum and mix well. Then stir in fruit.
    5. Pour into loaf pan. Bake about 1-1/2 hours or until cake tester inserted in center comes out clean. Cool and store one night before slicing.
