    Peaches and Cream Muffins


    List of Ingredients


    • 1 -14 oz can sliced peaches, drained
    • 1 -4oz pkg cream cheese
    • 2 eggs
    • 1-1/2 cup milk
    • 1/3 cup liquid honey
    • 1/4 cup melted butter
    • 1 tsp grated lemon rind
    • 1-1/2 cups all bran
    • 2 cups flour
    • 1 tbsp baking powder
    • 1 tsp cinnamon
    • 1/2 tsp salt


    Instructions


    1. Line muffin pan with papers. Chop peaches and cream cheese into cubes and set aside. Beat eggs lightly with a fork. Stir in milk, honey, butter and lemon rind. Combine remaining ingredients in large bowl. Stir peaches and cream into cereal, stir into dry ingredients. Spoon into muffin tins filling each to top. Bake at 400 degrees for 20 - 25 minutes until golden brown.
