Canned Fried Green Tomatoes
List of Ingredients
2 firm medium-size, green tomatoes
The following is used in the recipe not in the canning.
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup white cornmeal
1/4 cup bacon drippings
Recipe
Canning:
Start water in large pot and let it come to a complete boil.
Slice tomatoes 1/4" thick and place in wide mouth jars.
Fill jars with tap water.
Add 1 teaspoon of salt to jar.
Put steralized lids on jars and seal.
Put jars in boiling water for exactly 10 minutes.
NOTE: If you boil for any longer amount of time the tomatoes get soggy and turn white in color.
This makes a great gift.
RECIPE: Attach recipe card to jar!
Remove tomatoes from jar and drain, pat dry. Sprinkle with salt and pepper; dredge in cornmeal. Heat bacon drippings in a heavy skillet; add tomatoes, and cook over medium heat until browned, turning once. Yield:
2 to 3 servings.
