Fried Okra/Onion Rings/Mushrooms
List of Ingredients
3/4 cup cornstarch (really)
1/4 cup All-Purpose Flour
1 tsp. baking powder
1/2 tsp. salt
1/8 to 1/4 tsp. pepper (I use 1/4 tsp. white pepper)
1/2 cup water
1 egg, beaten
Florida Sweet Onions or Vidalia, sliced in rings
extra salt (optional)
Recipe
In a medium sized bowl, stir together the 1st 5 ingredients. Add water and egg, beat until smooth.
I find that letting the onions get chilled helps coat them, but this step isn't necessary. I just find that it helps the batter adhere a little better.
Dip onions into batter, letting excess drip off. Fry in 375º oil for 2-3 minutes, turning once, until golden brown. Drain on paper towels. And quickly season with salt, if desired.
