    Mediterranean White Bean Spread

    List of Ingredients




    2 cups dried navy beans or Great Northern Beans
    8 cloves garlic, peeled
    4 tsp. olive oil
    1/4 tsp. salt
    fresh oregano leaves

    Recipe



    1. Place the beans in a large pot, add 8 cups of water, and soak for at least 4hrs. Drain off the water, and add 4 cups of frsh water and the whole garlic cloves. Cover and simmer over low heat for 1 1/2 hours, or until the beans are very tender and all teh liquid has been absorbed. Note: Perodically check the pot during cooking to see if more water is needed.

    2. Allow the beans to cool slightly. Place in a food processor or blender with all the remianing ingredients except the oregano leaves. Process until smooth.

    3. Transfer the dip to a serving dish, garnish with organo leaves. Serve at room temperature with French bread, pita bread or crackers.
