Amish-Potato Donuts
List of Ingredients
1 1/2 cups of sugar
3 eggs, beaten
2 cups of mashed potatoes
1 cup of milk
5 teaspoons of baking powder
5 cups of all-purpose flour
3 tablespoons of melted shortening
1 teaspoon of salt
1/4 teaspoon of nutmeg Recipe
Beat mashed potatoes.
Add melted shortening, eggs and milk.
Sift dry ingredients together.
Add dry ingredients to liquid.
Dough should be soft yet firm enough to roll.
Divide dough into four parts.
Roll out pieces of dough one at a time to 3/4 inch thickness.
Cut dough with doughnut cutter.
Drop doughnut into hot fat.
Fry until a golden brown on both sides.
Drain on absorbent paper.
Shake doughnuts in a paper bag containing a mixture of sugar and cinnamon or powdered sugar.
Makes about 4 1/2 dozen doughnuts
Recipe Note:
If a fat frying thermometer is not available, test temperature by dropping a 1/2 inch cube of bread into hot fat. It should brown in 1 minute.
