Breakfast Casserole

What's nice about this recipe is it can be prepared overnight and popped into the oven in the morning. Just make sure you allow it to set out 15-20 minutes before baking.
8 frozen hash brown patties
3 cups sharp cheddar cheese
1 cup Monteray Jack cheese
1 cup fully cooked ham, diced, sausage, or bacon
1 scallion, thinly sliced
7 eggs
1 cup milk
1/2 tsp. salt
1/2 tsp. dry mustard
1/4 tsp. pepper
Recipe
Place hash brown patties in a single layer in a greased 13x9-inch baking dish. Sprinkle with cheeses, ham and onion.
In a bowl, beat eggs, milk, salt, mustard and pepper until well combined. Pour over hash browns.
Cover and bake at 350º for 1 hour. Uncover and 15 minutes longer or until edges are golden brown and knife inserted near center comes out clean.
