Buttermilk Donuts
List of Ingredients
2 eggs
1 cup sugar
2-1/2 tbsp. butter, melted
1/2 tsp. vanilla
3-3/4 cups flour, divided
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1/4 tsp. ground cinnamon
1 cup buttermilk
Oil for deep frying
cinnamon-sugar, confectioners' sugar, or chocolate icing
Recipe
In a mixing bowl, beat eggs and sugar about two minutes. Add butter and vanilla; mix well.
In another bowl, combine 3 cups flour, baking soda, baking powder, salt and cinnamon. Add to egg mixture alternately with buttermilk. Cover and refrigerate for a few hours or overnight.
Knead in remaining 3/4 cup flour and roll dough on a lightly floured surface1/4" thickness. Cut with a 4-inch diameter donut cutter.
Heat oil in deep fryer or electric skillet to 375º. Fry donuts a couple at a time for 1-1/2 minutes on each side or until golden. Drain on paper towels.
Frost or place cinnamon sugar or powdered sugar in a sack and shake donuts gently.
