The first time I had this bread I knew I had to have the recipe. I inquired who made it and then told her I definately wasn't going home without that recipe. She blessed me by not just giving me the recipe, she gave me the recipe book that had the recipe in it. The recipe book was put together by several churches within a distric up North. Wow, was I ever blessed! *NOTE* I've since experimented and used this for carrot muffins as well. Just add a wee bit more liquid and wah-lah, your enjoying a nice home baked muffin!
List of Ingredients
1 1/4 cups sugar
3/4 cup oil
1 1/2 cups flour
1 tsp. cinnamon
1 tsp. soda
1 tsp. vanilla
2 eggs
1 1/2 cups grated carrots
1/4 tsp. salt
Recipe
If not using a teflon coated bread pan, spray pan very lightly with cooking spray. Makes either two small size loaves or one large bread pan size loaf.
Mix ingredients together and bake 1hr. at 350ºF.
