    Cottage Cheese Rolls

    List of Ingredients

    1 ounce active dry yeat
    1/4 cup water
    1 cup non-fat cottage cheese
    1 tbsp. sugar
    1 tsp. salt
    1/4 tsp. baking soda
    1 large eg, beaten
    2 1/2 cups All Purpose flour

    Recipe

    In a large bowl, dissolve yeast in 1/4 cup of very warm water. Warm cottage cheese in a saucepan over low heat, then remove from heat.

    Add cottage cheese, sugar, salt, soda, egg, and 1/2 cup of flour to yeast. Beat at medium speed with an electric mixer for 2 minutes.

    Gradually add remaining flour to mixture to form a soft dough, then turn it out onto a floured board. Knead for 10 minutes.

    Place dough in a greased bowl, and roll it round to grease all sides. Cover and let rise in a warm place free from drafts until it doubles in size (about 1-1/2 hours). Punch dough down, then turn it out onto a floured board. Divide dough into 12 equal pieces, then shape into balls.

    Place balls in 9-inch round baking pan sprayed with non-fat cooking spray. Cover and let rise in a warm place until doubled in size (about 30 minutes).

    Bake at 350° for 20 minutes.
