    1 Cup graham or whole wheat flour
    1-1/2 Cups all-purpose flour
    1 Cup cornmeal
    3 Teaspoons baking powder
    1-1/2 Teaspoons baking soda
    1/2 Teaspoon salt
    1-3/4 Cups buttermilk
    3/4 Cup molasses
    1 Cup raisins and/or chopped walnuts


    Recipe



    To prepare coffee cans: Grease 3 13oz. coffee cans or 2 greased 8-inch loaf pans. Set aside.

    Combine the both flours, cornmeal, baking powder, soda and salt in a mixing bowl. Mix in buttermilk and molasses, then add to dry ingredients and mix well.

    Stir in raisins and nuts. Carefully pour into cans leaving a 2" space at the top. Cover with foil. Bake in a 350ºF oven 45-60 minutes. Cool for 15 minutes before turning removing cakes from pans.

    These cakes freeze nicely and make great addition's to holiday gift baskets.
