Orange Cranberry Tea Bread
List of Ingredients
1 1/2 cups fresh cranberries
1 cup sugar
2 cups flour
1 Tbs. Baking Powder
1/2 tsp. nutmeg
1/4 tsp. ground ginger
1/4 tsp. salt
grated zest of 2 oranges
1/2 cup chopped walnuts
3/4 cup fresh orange juice
1 tsp. vanilla
4 tbsp. melted butter
Recipe
Grind cranberries and sugar in a food processor till coarse; set aside.
In a large bowl combine all the dry ingredients. Toss in the nuts; set aside.
In another bowl whisk until frothy the orange juice and eggs. Add vanilla and cranberry mixture. Pour over dry mixture and drizzle over melted butter. Stir by hand with spoon just to moisten and cranberries are evenly distributed. Pour mixture into an 8 x 4 inch greased and floured pan. Bake in center rack of preheated 350º oven 45 to 50 minutes or until tested done. Cool completely on rack before storing.
