Jeannie's Favorite Cream Cheese Icing
List of Ingredients
1/2 stick softened butter
4 oz. of softened cream cheese
1 tsp. pure vanilla extract
1/4 cup pineapple juice (more if desired)
2 1/2 cups powdered sugar (again more or less to suit your desired consistancy)
Recipe
Mix together butter and cream cheese until smooth. Add vanilla and pineapple juice until completely blended in. Gradually add in powdered sugar. You can add more or less of pineapple juice or powdered sugar to get your desired consistancy. If you like nuts, you could also add in some finely chopped pecans. Now that would be great on a nice carrot layer cake.
