    Melted Ice Cream Cake

    In choosing an ice cream, pick your flavor and let it melt. The only trick is that you must have 2 cups of melted ice cream. For super-premium brands like Edy's or Ben & Jerry's that 1 pint frozen. For less expensive brands with a lot of air pipped in, you'll need to begin with more than a pint.

    This recipe works well in either a bundt pan or 13 x 9 in pan.

    List of Ingredients




    1 package of plain white cake mix
    2 cups melted ice cream
    3 lg eggs

    Chocolate Marshmellow Frosting:
    2 cups confectioner's sugar
    1/4 cup unsweetened cocoa
    6 lg marshmellows
    1/2 stick of butter
    1/3 cup plus 1 tablespoon milk
    1 teaspoon pure vanilla extract

    Recipe



    Preheat oven to 350º. Lightly mist pan with vegetable spray and dust with flour.

    Place the cake mix, melted ice cream and eggs in a large mixing bowl. Blend with an electric mixer on low for 1 minute. Increase to medium speed and beat for 2 more minutes. The batter should look thick and well blended. Pour into pan and place in oven. Bake 38-42 minutes or until the cake starts to pull away from the sides of the pan.

    Cool on a wire rack for 15-20 minutes then take out of pan (if you used a bundt) allow to cool another 20 minutes or so).

    * When I made the Phish Food ice cream I used chocolate cake mix. The recipe says white it depends on your taste.

    Frosting:
    Sift the sugar and cocoa together. Set aside. Place marshmellows, butter and milk in a medium heavy sauce pan over low heat. Stir until the marshmellows are melted,
    3-4 minutes. Remove from heat. Pour sugar mixture over marshmellow mixture. Add vanilla and stir until smooth. Use at once.
