Mom's Thanksgiving Butterscotch Pie
Every Thanksgiving my Mom would work double duty making all sorts of pies. There would be Mince, Cherry, Apple, Lemon Meringue, Custard, Pumpkin, Pecan, and Butterscotch. The most talked about was Butterscotch. My sister remembers it as her favorite. Now I'd like to share it with you.
List of Ingredients:
3/4 cup Brown Sugar, packed
2 T. Butter
1 T. Flour
1 cup Milk
1 Egg, seperated
1 tsp. Vanilla
1/4 tsp. Salt
1 tsp. Sugar(for meringue)
Unbake Pie Shell
Optional Meringue Topping
Instructions:
1.Heat brown sugar and butter in double boiler, stirring till smooth. Remove.
2.Blend together flour and 1/4 cup of the milk. Add remaining milk gradually, mixing till smooth.
3.Add milk mixture gradually to sugar mixture, stirring well. Bring to boil and cook 1-2 minutes longer. Stir a small amount of hot mix into beaten egg yolk. Return to double boiler and cook about 5 minutes more, stirring slowly.
4.Remove and blend in extract and salt.
5.Bake 450º - 10 minutes, then 350º - 20 minutes more.
6.If Meringue Topping is desired, beat egg white till frothy, add 1 tsp. of sugar and beat till stiff. Top pie and bake an extra 10 minutes longer at 350º.
