Mother's Carrot Cake
List of Ingredients
2 cups sugar
1 cup oil
3 cups finely grated carrots, packed into measuring cup
4 eggs
2 cups sifted flour
2 tsp. baking powder
1 tsp. baking soda
2 tsp. salt
2 tsp. cinnamon
1/2 cup chopped pecans
Recipe
Sift dry ingredients; set aside.
Pour oil in bowl. Add carrots, mix well. Add eggs one at a time, beating well. Add sifted dry ingredients gradually, mixing 3-4 minutes, or until completely combined.
Add nuts.
Turn into ungreased pan.
