    Pumpkin Roll

    We received this Pumpkin Roll as a hostess gift two Christmas's ago. Our friend who gave it was kind enough to give the cake and the recipe all at once. Just make it once and you too will be hooked.


    List of Ingredients


    • 3 Eggs
    • 2/3 cup Pumpkin
    • 1 cup Sugar
    • 1 tsp. Salt
    • 1 tsp. Baking Soda
    • 1/2 tsp. Cinnamon
    • 3/4 cup All Purpose Flour
    • FILLING:
    • 1 8oz. Cream Cheese, softened
    • 2 T. Butter
    • 1 T. Vanilla Extract
    • 1 cup Powdered Sugar


    Instructions


    1. Grease Jelly-Roll pan and cover with wax paper.
    2. Combine all ingredients until thoroughly blended.
    3. Bake at 375º for 15 minutes or until tests done.
    4. Sprinkle a clean dish towel with Powdered Sugar. Place cake on towel while still warm. Remove wax paper.
    5. Roll up Jelly-roll fashion and refrigerate rolled for 1 hour.
    6. Unroll and spread with filling. Reroll and refrigerate.
    7. Lightly dust with Powdered Sugar before serving.
