Spice Cake with Boiled Icing

Hope you enjoy! This is a favorite of mine and one I treasure as a special memory from my mom. When I'm missing her this is a sweet reminder of the love of cooking and baking she left to me!
Spice Cake

Cream together:
1/2 cup shortening
1 tbsp. molasses
1 1/2 cups sugar
Add:
1/2 tsp. salt
1/4 tsp. cloves
1/8 tsp. nutmeg
1 tsp. vanilla
Beat in:
2 eggs
Alternately add:
1 cup of milk
and
2 1/2 cups of Sifted Cake Flour
Stir in by hand:
1 tbsp. double acting baking powder
Pour into well prepared 9" round pans.

One 9x13
Bake in a preheated 375º oven for 25 minutes or until tester shows done.
Rest on racks for 15 minutes, remove and allow to cool completely before icing.
Boiled Icing

Mix together the following ingredients in a heavy guage saucepan or double boiler:
1 cup dark brown sugar
1/8 tsp. salt
1/2 cup of heavy half n' half
3 tbsp. butter
1 1/2 tbsp. light corn syrup
Mix all the following together and allow to come slowly to a boil; boil for one minute. Remove from heat and allow to cool slightly.
Optional addition:
1 tbsp. instant coffee crystals
Stir in:
1 1/2 tsp. vanilla
With hand mixer beat in:
1-2 cups sifted confectioners sugar. You decide the consistancy you desire. For instance, if I'm making a 9x13 cake that is staying put in the pan I don't mind if the icing is a bit runny. If I'm making the 9" rounds I like it stiffer.
