    Sweet Butternut Squash Pie

    List of Ingredients




    2 butternut squash, halved and seeded
    2 eggs
    2 egg yolks
    1/2 teaspoon cinnamon
    1/2 teaspoon nutmeg
    1/2 teaspoon allspice
    Salt and pepper, to taste
    1 pre-baked 8-inch pie round





    Recipe



    Preheat oven to 350 degrees. Place squash on a rack on a cookie sheet and bake for approximately 30 minutes or until squash is tender. Remove squash meat from the skin and puree. Set aside to cool.

    Mix eggs with yolks and spices and fold together with the cooled squash. Season with salt and pepper and place in the baked pie round. Bake for 45 minutes or until pie sets up.

    Yield: 8 servings
    Preparation Time: 15 minutes
    Cooking time: 1 hour and 15 minutes
