Whoppie Pies

List of Ingredients
- 2 cups sugar
- 1/2 cup Crisco shortening
- 2 eggs
- 4 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 1/2 teaspoons salt
- 1/2 cup cocoa
- 2 teaspoons vanilla
- 1 cup sour milk (add 1/2 tsp. vinager to regular milk)
- 1 cup boiling water
- Filling:
- 4 tablespoons flour
- 1/2 teaspoon salt
- 1 cup hot milk (be careful not to scald)
- 1/4 cup Marshmellow Fluff or a handful of marshmellows
- 1 stick margarine
- 1/2 cup Crisco shortening
- 1 teaspoon vanilla
- 1 cup powdered sugar
Instructions
- In a large bowl mix together flour, baking powder, baking soda, salt, and cocoa; set aside.
- Cream together sugar, Crisco, and eggs. Add dry ingredients. Add sour milk and boiling water.
- Drop by tablespoons onto ungreased cookie sheets.
- While the whoppie pies are cooling prepare filling.
- Filling: Blend together flour, salt and hot milk. Quickly add Marshmellow Fluff or marshmellows. Allow to cool.
- Add the remaining ingredients to cooled mixture and beat until creamy.
- Use a well rounded tablespoon of filling and put on whoppie pie, topping with another whoppie pie. Store in refrigerator.
