Kris say's:This is a recipe that my mother passed down from my fathers mother and is most likely Pennsylvania Dutch in origin. These have always been a favorite of mine. I remember with anticipation when mom and dad would hand
select the perfect coconut for these cookies. Mom still blesses the day she found out bagged coconut worked just as well. The name is deceptive - these cookies look like lace when baked and spread to paper thin. Don't exceed 6 per cookie sheet.
List of Ingredients
1 1/4 cup light brown sugar
1 1/2 cup flour
7/8 cup margarine
2 cups flaked coconut
1/2 pint molasses
1/2 tsp cinnamon
Recipe
Mix ingredients. Chill dough. Drop by 1/2 teaspoon on a cookie sheet covered with greased aluminum foil - 6 to a sheet. Bake at 350º for 8 minutes. Let cool 6 minutes on the sheet before you remove them. Happy Holidays!
