Lemon Madeleines
My favorite recipe thus far for Madeleines. If you've never had a Madeleine your in for a treat. They are a soft, cake like cookie. Great for tea, special guests, or just for a nice little treat for yourself.
List of Ingredients
- 1 egg, seperated
- 1/2 cup granulated sugar
- 1 cup All Purpose Flour
- 1/2 cup milk
- 2 tablespoons canola oil
- 1 1/2 tsps. lemon extract, mixed with 11/2 tsps. water
- 1 1/2 teaspoons double acting baking powder
- 1/4 teaspoon salt
- Powdered Sugar for dusting
Instructions
- Prepare Madeleine pans by greasing and flouring.
- In a small bowl beat egg white with electric mixer on medium speed until foamy. Gradually add in 1/4 cup of the granulated sugar; continuing beat until the whole 1/4 cup is incorporated in and the mixture becomes stiff. Set aside.
- Meanwhile in a larger bowl beat egg yolk with remaining sugar. Add remaining ingredients, except powdered sugar. Beat on high speed for about 2 minutes. Fold in egg white mixture.
- Fill molds 2/3rds full. Bake 10 minutes or until edges just are light brown in color.
- Allow cookies to cool in pan for a minute or two. Remove to a towel that is lightly dusted with powdered sugar, making sure that the decorative side of the Madeleine is facing up. Dust with powdered sugar just before serving.
- Makes 24 Madeleines.
