    Oatmeal Toffee Cookies

    List of Ingredients




    1 3/4 cup flour
    1 tsp. baking soda
    2 sticks butter, softened
    3/4 cup sugar
    3/4 cup packed light brown sugar
    1 egg
    1 tsp. pure vanilla extract
    1 1/2 cups quick cooking oatmeal (not instant)
    1/2 cup mini semi-sweet chocolate chips
    1/2 cup toffee chips (like SKOR)

    Recipe



    Cream butter until soft. Beat in sugars. Beat in eggs and vanilla. Next add flour and baking soda and beat until well mixed. Stir in oatmeal, toffee bits, and chocolate pieces.

    Preheat oven to 350º.

    Roll dough into 1" balls and place two inches apart on parchment lined baking sheets. Bake for 8-10 minutes, just until edges are golden. Completely remove parchment with cookies and place on rack to cool. Remove after cookies have completely cooled.
