Neapolitan Slices
List of Ingredients
NEAPOLITAN SLICES
1 cup butter
3/4 cup granulated sugar
1 teaspoon pure vanilla extract
2 1/2 cups All-Purpose flour
1 teaspoon baking powder
pinch of salt
4 drops red food coloring
1/4 cups finely chopped red candied cherries
1/3 cup semi-sweet chocolate chips, melted
1/2 teaspoon rum extract
1/3 cup shredded coconut
Recipe
Line a 8x4" loaf pan with waxed paper. In a large bowl beat together butter, sugar, egg and vanilla until fluffy. Add flour, baking powder and salt, beating until well blended. Divide dough into 3 egual portions placing each one on a square of waxed paper.
To the 1st portion add food coloring and candied cherries.
To the 2nd portion add melted chocolate and nuts.
to the 3rd portion add rum extract, and coconut.
Press the pink dough in an even layer in the bottom of lined pan. Cover evenly with chocolate dough. Top last with white dough. Cover and refrigerate several hours or overnight.
To Bake:
Preheat oven to 350º.
Invert pan and remove waxed paper. cut into 1/4" crosswise slices. Cut each slice into 3 equal pieces. Place on ungreased cookie sheet one inch apart.
Bake 10 minutes or just until you see sides golden brown.
Remove and cool on baking racks.
Makes about 6 dozen cookies.
