Pecan or Pumpkin Tarts
List of Ingredients
Crust:
1/2 cup butter, softened
1 3 ounce pkg. cream cheese, softened
1 cup All-Purpose flour
Optional Filling choices:
Pecan Filling:
1 egg
3/4 cup packed brown sugar
1 tablespoon melted butter
1 teaspoon pure vanilla extract
1/2 cup finely chopped pecans
Beat together egg, brown sugar, melted butter, and vanilla. Stir in chopped pecans.
Pumpkin:
1 egg
1/2 cup pumpkin puree (canned or homemade)
1/4 cup sour cream
1 tablespoon milk
3/4 teaspoon pumpkin pie spice
Beat together all ingredients until smooth.
Recipe
In a small bowl beat together butter and cream cheese. Stir in flour. Cover and chill dough for 30 minutes. Shape into 1" balls and press in the bottom and up the sides of mini muffin tins to form crust.
Prepare filling choice.
Fill each pastry with 1 rounded teaspoon of filling.
Bake in 325º oven for 25 minutes.
