Jeannie's Petit Fours
List of Ingredients
1 pkg. White or Yellow Cake Mix
1 1/2 cups hot water
2 1/4 cups Powdered Sugar
3 cups sugar
1/4 tsp. cream of tartar
1 tsp. pure vanilla extract
food coloring of choice
melted unsweetened chocolate
Recipe
Preheat oven to 350º.
Prepare a 15 1/2x10x1" jellroll pan by lining it with wax paper on bottom.
Mix cake as directed on package; spread batter into pan and bake for 25-30 minutes or until cake tests done. While cake is baking lightly dust a cotton kitchen towel with powdered sugar. Immediately when cake is taken from oven, place towel over cake and invert onto towel. Remove wax paper. Cool cake completely.
When cake is completely cooled (I find freezing it works best) cut into 1 1/2" size pieces. You should end up with 20 petit fours.
Combine sugar, cream of tartar and hot water in a saucepan. Cook until it spins a thread (226º). Remove from heat and cool until lukewarm. Stir in vanilla. Gradually beat in confectioners sugar until smooth. Add food coloring if desired. Place petit fours on a rack with wax paper underneath. Pour icing over petit fours. If you run out of icing remove drippings from the wax paper under the petit fours and reuse. You can a few drops of hot water to thin out again if necessary.
Decorate with melted swirled chocolate or anyway you'd like.
