    Florida Blue Crab Stuffing

    One of my absolute favorite seafood dishes is stuffed flounder. If your looking for a good stuffing for your seafood...look no further.

    1 pound Florida blue crab meat
    ½ cup chopped onion
    1 cup chopped celery
    1 chopped green pepper
    2 cloves garlic, minced
    1 cup butter
    2 cups soft bread crumbs
    3 eggs, beaten
    1 tablespoons chopped parsley
    ½ teaspoon pepper


    Recipe



    Remove pieces of shell or cartilage from crab meat. The tricky part here is to not eat the crab meat as you work.

    Cook onion, celery, green pepper and garlic in butter until tender, but not brown. Add remaining ingredients; mix well. Stuffing for six ¾-pound flounder or one 4-pound flounder.

    Yield: 6 servings
