    Florida Seafood Kabobs

    List of Ingredients




    1/2 pound scallops
    1/2 pound peeled shrimp
    1/2 pound grouper or swordfish
    1 green pepper cut into chunks
    12 large mushrooms, cut in half
    12 cherry tomatoes
    1/2 cup olive oil
    8 minced scallions
    1/2 cup lemon juice
    6 tablespoons soy sauce
    2 tablespoon dried basil


    Recipe



    Combine the olive oil, scallions, lemon juice, soy sauce and basil. Reserve half the marinade mixture for basting. Add the seafood to the rest of the marinade and refrigerate for several hours. Drain the seafood. Skewer alternately with the vegetables. Grill 5 to 6 minutes on each side, basting with the reserved marinade.
