Salmon Fillets with Dill Butter
List of Ingredients
2 6 to 8 ounce Salmon fillets
salt to taste
pepper to taste
1 Tbsp. olive oil
Dill Butter:
1/2 cup sweet cream butter
2Tbsp. chopped fresh dill (or dry)
1Tbsp. lemon juice
1/2 tsp. small clove of garlic, minced

Dill Butter
1. With a hand mixer or wooden spoon, in a small bowl beat butter until light and fluffy. 2. Beat in dill, lemon juice, and garlic until well combined. Store in refrigerator until ready to use.
To prepare Salmon:
Rinse salmon under cold water and dry with paper towels.
Sprinkle salmon with salt and pepper, then lightly flour on all sides.
In a large skillet over medium head, heat the oil until it "ripples". Place salmon in a pan skin side up. (Do not crowd the pan). Cook for four to five minutes, turn salmon over and cook for additional four to five minutes. Using tongs, hold salmon on each end for several seconds to brown edges.
Transfer salmon to serving plate. top each piece with 2 teaspoons Dill Butter and serve.
