The Legend of the Cranberry
Recipe Introduction
Adding the optional lemon & orange zests and cinnamon will make for a more richly flavord cranberry sauce.
List of Ingredients
2 cups sugar
2 cups cold water
2 strips (each 2 x 1/2 inch) lemon zest (optional)
4 strips (each 2 x 1/2 inch) orange zest (optional)
1 cinnamon stick, broken in half (optional)
2 packages (12 ounces each) fresh or frozen cranberries, stemmed, sorted, and washed.
Recipe
1. Combine sugar and water, and if desired, lemon and orange zests and cinnamon stick, in large heavy saucepan. Bring to boiling over medium heat. Add cranberries; bring to boiling. Lower heat to medium-low; simmer, uncovered, 12 to 15 minutes until berries have popped.
2. Cool to room temperature. Remove and discard lemon and orange zests and cinnamon stick, if used. Serve sauce with turkey.
Makes about 5 cups
