    Stuffed Baked Sweet Potatoes

    List of Ingredients




    6 medium orange-fleshed sweet potatoes
    1/2 cup orange juice
    3 tbsp margarine
    1 tsp salt
    1 8 oz. can crushed, drained pineapple


    Recipe



    1. Bake sweet potatoes at 375ºF for 1 hour or until tender Cut a 1-in lengthwise strip from top of each sweet potato. Carefully scoop pulp from shell.

    2. Combine sweet potato pulp, orange juice, margarine, and salt. Stir in pineapple

    4. Stuff shells with sweet potato mixture and sprinkle with pecans if desired

    5. Bake at 375ºF for 10 min.
