Sweet Potato Souffle

3 cup sweet potatoes, cooked and mashed
1/3 cup dry sherry
1 1/2 cup half and half
6 tbsp. butter, melted
3 tsp. orange zest
1 tsp. salt
1/4 tsp. white pepper
1/4 tsp. nutmeg
1/4 tsp. cinnamon
2 tbsp. brown sugar
6 eggs, separated
Recipe
Preheat oven to 375°F.
Butter a 2 quart soufflé dish or 6 individual soufflé dishes. Prepare a Bain Marie by placing the buttered cup(s) in a baking dish, then filling the dish 3/4 the way up the sides of the cups, with warm water. Baking the soufflés this way helps them to rise and cook evenly. (see photo)
In a large mixing bowl, combine all ingreadients except eggs and beat until smooth. Beat in egg yolks. Set aside.
In a separate large bowl, beat egg whites until stiff, but still moist. Gently fold egg whites into the sweet potato mixture and pour into soufflé dish(es). Bake for about 45 minutes or until light golden brown on top. Serve immediately.
