White Fruit Cake
List of Ingredients
This is not like any fruit cake you've known. Quite moist, and quite good!
3 cups flour
1 cup candied citron
1/2 cup candied lemon peel
1 cup candied pineapple cut up
1 1/2 cups whole candied cherries
3 cups seedless white raisins
2 cups coarse chopped walnuts
1 tsp. baking powder
2 tsp. salt
4 eggs
1 1/2 cups sugar
1 cup oil ( not olive )
1 cup pineapple juice
Recipe
Mix 1 cup of flour with the candied fruit, nuts and peel. Sift remaining flour with baking powder and salt. Beat eggs well in bowl and beat in sugar and oil till well blended. Add dry ingredients alternately with pineapple juice. Add fruit and nut mixture and blend well. Grease 2 , 9 x 3 inch loaf pans and line with greased wax paper. Pour batter into pans. Decorate with some fruits and nuts if desired.Bake in a preheated 275º oven for 2 1/2 hours or tested done. Cool in pans and remove. Wrap in foil and store in refrigerator.
