    Quick & Easy Freezer Strawberry Jam

    Recipe Introduction

    This is a recipe I've been using for sometime. It works with other fruits as well. All the recipes are on the insert of Sure*Jell Fruit Pectin, For Lower Sugar Recipes. It's the Sure*Jell that is in the pink box. For containers: I just buy the cheap sort of plastic freezer containers. You can also buy the newer Ziplock sort as well. Either way, use the containers that best suit your family and that you would use up in a week or two after defrosting. I find the 1 1/2 cup or 2 cup size are best. That way you have it for a nice Sunday breakfast, and for a few days :)(maybe):) after. Remember: If you don't wear an apron normally (shame on you :) ) you should wear one for this! The smell is great, all the strawberries smells are great, but the stains aren't.

    List of Ingredients

    1 box Sure*Jell lower sugar recipe
    4 Qts. strawberries or 4 cups crushed
    3 cups sugar
    water

    Recipe

    1. Wash and rince plastic containers and lids.

    2. Wash fruit. Discard stems and crush strawberries. If you have a potato masher, that works great. You will need four cups of crushed strawberries for each box you are preparing. Remember you aren't pureeing the fruit, just crushing. Having bits of fruit in the jam is the best part.

    3. Measure out the exact amount of fruit and place in a large bowl.

    4. Measure out exact amount of sugar and place in large pot. DO NOT USE SUGAR SUBSTITUES!

    5. Stir in 1 box of Sure*Jell lower sugar and blend in with sugar.

    6. Stir in 1 cup water. Bring mixture to a boil over a medium-high heat, stirring constantly. After boil, stir 1 more minute longer. Remove from heat.

    7. Stir in measured fruit. Stir at least for 1 minute, or until thoroughly mixed.

    8. Pour immediately into prepared containers. Make sure you leave 1/2 inch space between the jam and the cover for expansion during freezing.

    9. Let stand at room temp for 24hrs until set. Refrigerate for up to three weeks or freeze for up to a year. When thawing thaw in refrigerator, or very carefully on defrost in the microwave. You'll have to practice with the defrost depending on the size and type of containers you've used.
