Corn & Bacon Muffins
List of Ingredients
1 1/2 cup Flour
1/2 cup Yellow Cornmeal
1 T Baking powder
1/2 tsp. Salt
2 Eggs
1/2 cup Honey
1/2 cup Milk
1/2 cup melted butter
8 oz Bacon, cooked crisp, drained and crumbled
1/2 cup Corn
Recipe
In large bowl, mix flour, cornmeal, baking powder, and salt. In a small bowl beat eggs; beat in milk, honey, and butter. Add to flour mixture; stir just until blended. (Batter will be slightly thin.) Fold in bacon and corn. Fill muffin cups (paper liners) 2/3 full.
Bake in preheated 400º oven for 15 to 25 minutes (or 30 to 35 minutes for 9-inch square greased pan) or until toothpick comes out clean.
