Cranberry-Nut Muffins
List of Ingredients
2 cups flour
1 cup sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
2 tsp. grated orange rind
1/2 tsp. nutmeg
1/4 tsp. ginger
1/2 tsp. cinnamon
1/2 cup shortening ( could be white vegetable shortening, butter or margarine )
3/4 cup orange juice
2 large eggs
1 1/2 cup fresh or frozen cranberries
1 cup chopped walnuts
Recipe
Mix all dry ingredients. Cut in shortening until a coarse crumb texture. Stir in liquids. Mix cranberries and nuts with a tbsp. of flour and fold into mixture. Place mixture into muffin tins (makes about 18 regular muffins). Sprinkle tops with sugar. Bake 350º about 25 minutes or tested done.
