    Healthy Cinnamon Honey Muffins

    List of Ingredients




    3/4 Cup unprocessed bran
    1 Cup low-fat buttermilk, I keep powdered buttermilk on hand just for these recipes
    1 egg, beaten
    1/4 Cup honey
    1/4 Cup vegetable oil
    1/2 Cup raisins
    1/2 Cup grated carrots
    1 1/4 Cup sifted all-purpose flour
    1 teaspoon baking soda
    1/4 teaspoon salt
    1 teaspoon nutmeg
    1/2 teaspoon cinnamon

    Recipe



    Preheat oven to 425º. Coat muffin pan with nonstick spray.

    In medium bowl, combine bran, buttermilk, egg, honey, oil, raisins and
    carrots. Let stand 10 minutes.

    In large bowl, sift together remaining ingredients.

    Make well in center and add bran mixture. Stir just until dry ingredients are moistened. Batter should be lumpy. Do not over mix.

    Spoon batter evenly into 12 muffin pans.
    Bake 15 to 20 minutes.

    Makes 12 muffins.
