Lemon Poppyseed Muffins

1 cup butter, softened
1 cup sugar
4 egg yolks, well beaten
1/2 cup lemon juice
2 cups flour
2 tsp. baking powder
1 tsp. salt
4 egg whites, slightly beaten
2 tsp. grated lemon peel
2 tsp. poppyseeds
Recipe
Preheat oven to 375º. Combine sugar and butter and cream until smooth. Add egg yolks and beat well. Sift in dry ingredients together. Add alternately to creamed mixture with lemon juice, mixing well after each addition. Add poppyseeds, DO NOT OVERMIX. Fold in egg whites and lemon peel. Fill greased or prepared muffin tins 2/3 full and bake about 18-20 minutes in 375º preheated oven.
