Lemon Slice Muffins

List of Ingredients

3 lemons
1 tbsp. water
1/2 cup sugar
6 tbsp. sweet butter
2 cup flour
2 tsp. baking powder
1/2 tsp. soda
1/2 tsp. salt
2 eggs
1 cup milk




Recipe

Zest lemons, peel and slice very thin. Combine zest, water and only a 1/4 cup of the sugar in saucepan over medium heat until sugar dissolves. Add butter until melted; set aside.

Grease muffin pan, place ~ 1 tsp. sugar in bottom of each, place lemon slice over sugar.

Blend flour, baking powder, baking soda and salt in medium sized bowl; set aside.

In large bowl whisk eggs, add milk, add lemon mix, whisk until smooth. Combine with dry ingedients just until moistened. Bake at 400º for 15-20 minutes, until tested done. Let set for 5 minutes. Serve with lemon slice up.
