Mango Muffins

1/4 cup cream cheese
1/2 cup sugar
2 eggs
1 cup tropical sort flavored yogurt
Zest, 1 lemon
1 1/2 cups chopped mango (drain if using canned)
lemon juice
2 1/2 cups self-raising flour
1/4 cup toasted slivered almonds
1/4 cup sugar
Recipe
Preheat over to 350º
Prepare muffin pans by greasing with shortening or cooking spray.
Blend first amount of sugar into cream cheese. Beat in eggs, cream and yogurt. Mix in the mango and lemon rind. Fold in the flour. If the mixture is still runny add an extra 1/2 cup flour. Place 2/3 full batter into pans. Sprinkle with almonds and sugar. Bake for 25 or until tested done.
